Instructions

For the dough:

Note: this is a sticky dough. If you’re kneading by hand, do not add too much extra flour. You’ll dry it out. There’s tutorials on YouTube on how to properly do this 🖤

Shape the dough into a ball and place it in large greased bowl, cover with plastic film. Proof in a warm environment for 1-2 hours until doubled in size.

Punch the gas out of the dough and divide it into 11 pieces, (60g each) Form them into balls. Work on a lightly floured surface. You’ll have about 40g left over, shape that into a ball as well!

Place the dough balls onto pieces of cut out parchment paper. Flatten them out using your hands.

Place a bottle cap in the centre of the flattened dough, gently push down to create an indent.

Using a sharp knife, cut out the petals (8 per flower). Pinch the ends of the petals to shape them.

Cover the donuts with a kitchen towel and proof for 20 mins, until doubled in size.

To fry:

Line 2 baking sheets with paper towels. Set aside.

In a medium sauce pan, heat 2” of vegetable oil to 350F.

Fry for 1 minute on each side, they should be golden brown when ready. Take them out of the oil and let them drain on the prepared baking sheets.

Tip: use your finger to push down on the indents in the centre of the flowers before frying, this will help it hold its shape.

Tip: Fry 1-2 donuts at a time so the temperature doesn’t drop. And monitor the heat as you fry.

To decorate:

Dust with powdered sugar then add 1 tsp of strawberry jam in the centre of each donut. Use a chopstick to spread it out.
