450gbroccoli florets
this was about 2 1/2 heads of broccoli for me
1 cupsharp cheddar cheese
thicker, not finely shredded
⅔ cupdried cranberries
or cut grapes
2 x ½ cupbacon
crumbled
½ cupsalted sunflower seeds
⅓ cupred onion
diced into small pieces
¾ cupmayo
i use olive oil mayo
¼ cupDijon mustard
1.5 Tablespoonapple cider vinegar
40gsugar
¼ teaspoonsalt
¼ teaspoonpepper
Instructions
Step 1
Combine broccoli florets, cheddar cheese, dried cranberries, bacon, sunflower seeds, and onion in a large bowl.
Step 2
In a separate, small bowl, whisk together mayo, Dijon mustard, vinegar, sugar, salt, and pepper until smooth and well-combined.
Step 3
Pour dressing over broccoli combination and toss or stir well.
Step 4
Broccoli salad may be served immediately, but for best flavor refrigerate for at least one hour before serving. Make sure to toss broccoli salad thoroughly again before serving.
Step 5
Keep refrigerated if not consuming right away.
