Meatballs in rich tomato Mariana sauce

Lovely rich tomato and peppers sauce. Add a chopped onion at the start if Josh isn't eating! 😂

Instructions

Step 1
Fry off meatballs in a tablespoon of oil until browned all over
Step 2
Drain excess fat and out meatballs to one side
Step 3
Chop up two peppers up as finely as you can
Step 4
Chop up the garlic finely
Step 5
In the original pan that had the meatballs cook off 3 tbsp tomato paste in the residual meatball fat on a medium heat for 3 mins to deepen it's flavour. Keep stirring occasionally so it doesn't stick/burn.
Step 6
Push to one side and fry off the garlic for 30 seconds gently (turn heat down if browning too much)
Step 7
Add the peppers to the pan, mix well, and sweat off for 3 mins, stirring occasionally.
Step 8
Chop up 4 or 5 rich sun dried finely and add to pan for another minute.
Step 9
Add the 3 Tins of chopped tomatoes

Add salt, pepper, chilli flakes and sugar and stir well.
Step 11
Add meatballs back to the pan and stir in carefully so they don't break.
Step 12
Put lid on pan (or transfer to a tangine if you have one!) And cook for at least 2 to 3 hrs on 140°C Fan. Check every hour, stir gentle and add a little water if the sauce is reducing too much.
Step 13
Optional step: stir in some grated parmesan cheese!
