Banana & Oat Blender Pancakes

These healthy banana & oat pancakes are ideal for batch cooking or big groups. Using a blender is the ultimate hack to save you time and effort!
FREEZER TIP: cool after cooking and freeze in an airtight container or bag (with some baking paper in between each pancake to stop them from sticking). Lasts up to 3 months & when ready to eat, just pop the pancakes in the microwave till warm (approx. 1 minute)

3 cupsrolled oats
3eggs

Step 1
Add all the pancake ingredients to a blender jug & blend on a high speed until smooth (approx. 30 seconds)

Step 2
Heat a large pan on medium-low heat, spray with some oil & add about 1/3cup of the batter per pancake to the pan (make sure to leave a gap between each pancake)
Step 3
Cook the pancakes for 2-3mins and once the top of the pancake is bubbly, flip & cook for another minute on the other side. Repeat until the batter is finished!
Step 4
Stack the pancakes, top with banana slices, honey (or other syrup) & enjoy!
Makes around 18 pancakes (serves 6: 3 pancakes each)
