Instructions

Step 1
Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil.
Step 2
Slice a sliver from the bottom of each tomato so they will stand upright without wobbling. Cut a 1/2-inch slice from the top of each tomato and use a spoon to gently remove most of the pulp, placing it in a medium bowl. Place the tomatoes on the baking sheet.
Step 3
In a medium, heavy skillet, heat the olive oil over medium heat. Sauté the garlic, onion, mushrooms, basil, and oregano for minutes, and season with salt and pepper.
Step 4
Transfer the mixture to the bowl and blend well with the tomato pulp. Stir in the mozzarella cheese.
Step 5
Fill each tomato loosely with the mixture, top with Parmesan cheese,, and bake until the cheese is bubbly, 15-20 minutes. Serve immediately.
