Instructions

Step 1
1. In a bag, combine first 4 ingredients. Add pork. Toss to coat. In a 10-inch skillet, heat oil over medium-high. Add pork. Cook about 5 minutes
Step 2
Cut carrots in half length-wise. Cut each piece lengthwise into quarters. Add carrots and next 3 ingredients to skillet, stir to combine. Bring to boiling, reduce heat. Cover and simmer 10 minutes.
Step 3
Meanwhile, cook pasta according to package directions. Drain. Add pasta to pork mixture in skillet. Toss to combine. Top with sour cream and, if desired, sprinkle with parsley
