Salmon + sauce

1 lbsalmon
diced

1 cupkewpie mayo

2 Tbspsoy sauce

1 Tbspsweet chili sauce

1 Tbspoyster sauce

1 tsptoasted sesame oil

Instructions
Step 1
In a small saucepan combine 1/4 c soy sauce and 1/4 c sugar and cook over med-low until sugar dissolves & starts to bubble
Step 2
In a small bowl combine corn starch and water then add to saucepan
Step 3
Cook until mixture is thick enough to coat the back of a spoon (5-10 minutes, let cool in a small bowl for later)
Step 4
Cook sushi rice and spread in casserole dish

In another saucepan, heat rice vinegar, remaining sugar, mirin, and salt on medium until salt and sugar is dissolved, then let cool before spreading over rice

Preheat broiler
Step 7
Mix salmon, mayo, 2 tbsp soy sauce, sweet chili sauce, oyster sauce and sesame oil
Step 8
Spread salmon mixture evenly over the rice, firmly pressing down with a spatula
Step 9
Put under broiler until light brown on top (4-8 minutes) and let cool slightly
Step 10
Top with sliced avocados and nori, drizzle over soy sauce mixture from beginning of recipe.
