Ingredients

2 cupspotato chips
plain or salt and vinegar
6 x 4 ozsea bass fillets
4 cupmayonnaise
½ tspkosher salt
⅛ tspblack pepper
fresh parsley
finely chopped, for garnishing
4 Tbspbutter
or margarine
5cloves garlic
pressed
1 tspdried parsley
or 1 cube frozen parsley, defrosted
1 tspdried basil
1 cube frozen basil, defrosted
½ cupmayonnaise
½ tspkosher salt
Instructions
Step 1
Preheat oven to 400 degrees
Step 2
Line a metal baking sheet with parchment paper and set aside
Step 3
Place the potato chips in a food processor and pulse until the chips turn into fine crumbs
Step 4
Transfer potato chip crumbs to a plate
Step 5
Pat fish dry and place on the prepared baking sheet
Step 6
Brush the tops of each sea bass fillet with a thin layer of mayonnaise and season with salt and pepper
Step 7
Press the top of each piece of sea bass into the crushed potato chips then place back on the baking sheet with crust side up
Step 8
Bake uncovered 10-15 minutes (depending on thickness)
Step 9
For the dip: in a small saucepan melt the butter over low heat and add garlic
Step 10
Cook for 30 seconds until garlic is fragrant
Step 11
Stir in parsley and basil and mix well
Step 12
Remove from heat transfer to small mixing bowl and allow to cool for a few minutes
Step 13
Add the mayonnaise and salt and whisk until smooth
Step 14
To serve spoon a small amount of the garlic dip on the plate and top with a piece of sea bass
Step 15
Garnish with parsley
