Mixed stir fry: Change meat and/or add sliced greens, bean sprouts, nuts etc. (Notes: Bean sprouts do not keep long, so likely one use only from a bag. Olive oil will smoke too much, use general vegetable oil.)

Instructions

Step 1
Prepare all the vegetables by finely slicing.
Step 2
Add a splash of oil to a deep pan and saute the onions.
Step 3
Add the steak and brown.
Step 4
Add peppers, carrots and mushrooms, turn constantly until lightly cooked.
Step 5
Add water chestnuts, bamboo shoots and peas. Cook a few more minutes to soften peas.
Step 6
Add the rice (straight from the bag). Stir well.
Step 7
Add a good splash of light soy sauce and rather less dark soy sauce. Stir well.
Step 8
Add a 1/2 - 1 teaspoon of five spice and 1/2 - 1 teaspoon chilli flakes. Stir well.
Step 9
Stir well and make a large well in the center of the mixture down to the bottom of the pan. Break an egg into the well.
Step 10
Scramble the egg with the spatula, turning the cooked egg into the center to make a small omelette. Once lightly cooked, stir into the mixture so it breaks up.
Step 11
Repeat with the other egg.
Step 12
Taste and adjust seasoning to suit, mixing well for each addition.
