Instructions

Step 1
1. Melt butter in a large skillet over medium high and add onion, cooking until softened, about 5 minutes

2. Stir in corn kernels and water

3. Cover and cook for 10 minutes
Step 4
4. Transfer half of the corn mixture to a blender. Remove the center of blender lid. Secure lid and place clean towel over the opening. Puree until smooth
Step 5
5. Add puree to skillet, stir in heavy cream, salt, pepper and nutmeg
Step 6
6. Cook over medium until thickened and heated through
Step 7
7. Garnish with chopped fresh parsley
