Sausage Potato Casserole

This hearty casserole combines two comfort food staples, sausage and potatoes. Add in a generous helping of veggies and you have one great complete meal!

Instructions

Step 1
Heat 3-4 T olive oil in pan; cook sausages (3-4 min. per side) until they are browned all over. Remove & cut them into halves (or whatever size you prefer.)

Preheat oven to 400°F

Step 2
Grease casserole; arrange sausages & veggies (not potatoes).
Step 3
Mix olive oil with all dried herbs, garlic, red chili flakes, & fresh parsley.
Step 4
Drizzle quarter of this seasoned olive oil over veggies & sausages.
Step 5
Pour chicken broth into casserole.
Step 6
Toss potato slices with remaining seasoned olive oil, then arrange them atop sausages & veggies.
Step 7
Season potatoes with salt/pepper; drizzle on a little more extra virgin olive oil.
Step 8
If using panko, sprinkle it over casserole, followed by your preferred cheese.
Step 9
Bake casserole uncovered (45-50 min.) till potatoes are cooked. (Towards the end, you might need to cover with aluminum foil if the top of the casserole is getting too browned.)
