Spinach and tomato shakshuka (low sodium low carb)

A quick and healthy breakfast when you’re in a hurry. Low sodium, low carbs, but plenty of vitamins. Garlic infused olive oil and salt free lemon pepper seasoning give this dish flavour, so you won’t miss the salt.

Instructions
Step 1
Dice the tomato.
Step 2
Heat a drizzle of garlic infused olive oil in a non-stick frying pan on high heat and add the tomatoes and spinach.
Step 3
Cook until the spinach has wilted, and then move the vegetables aside to make a free spot in the centre. Crack the egg into that spot. Place the lid on the pan and cook for 3 minutes or until the egg is done.
Step 4
Season with salt free lemon pepper seasoning and serve. Enjoy!
