Spinach and tomato shakshuka (low sodium low carb)

Dice the tomato.

Heat a drizzle of garlic infused olive oil in a non-stick frying pan on high heat and add the tomatoes and spinach.

Cook until the spinach has wilted, and then move the vegetables aside to make a free spot in the centre. Crack the egg into that spot. Place the lid on the pan and cook for 3 minutes or until the egg is done.
