Instructions
Step 1
Cook the pasta in salted water until al dente, according to the package instructions.
Step 2
Heat 1 tbsp olive oil in a large skillet. Add onion and mushroom. Saute for 2-3 minutes until onions translucent and slightly browned.
Step 3
Add spinach and sundried tomatoes. Cook for 2 minutes until just wilted.
Step 4
Add garlic and cook for about 30 seconds until fragrant, then deglaze with vegetable broth. Add cream, grated parmesan and chili pepper flakes. Cook for 2 minutes, stirring until combined and cream gets some color. Add salt and pepper to taste.
Step 5
Once the pasta is ready, drain and add to the skillet. Mix to combine. Add more parmesan and season to taste. Optionally add a splash of pasta water to help sauce coat the pasta. Serve hot.
