This is a cajun dish that has been modified to suit my own tastes and use ingredients on hand. This was the first time being made and so pleased it came out perfect. I used brown baked flour which cut down on the time to cook if you were using a roux. To cook brown flour simply put several cups of flour on a tray in the oven at about 375° for about 1 hour and turn it every 15 minutes. When the flower reaches a nice tan color you're done.

Step 1
Add chopped onions to a pot. Add salt and Cajun seasoning and saute until just transparent.
Step 2
Add bell peppers and celery to the pot and continue to saute
Step 3
Add diced garlic and saute for about 1 minute more.
Step 4
Sprinkle the half cup of brown flour over the vegetables and stir
Step 5
Add chicken stock and stir. Simmer for about 15 minutes. Then add the lemon juice, Worcestershire and hot sauce.
Step 6
Gently nestle the fish fillets in the Cajun sauce and simmer until done, about 4 minutes.
Step 7
Serve over white rice and top with crispy bacon and / or green chopped onlons and enjoy
