Instructions
Step 1
Over medium heat, completely melt the butter
Step 2
While the butter melts, whisk 3 eggs at a time with a drop of water, chives, and pinch of salt until well blended
Step 3
Once the butter has melted, tip in the eggs and begin scraping and scrambling while shaking the pan occasionally

Once the mixture is more solids than liquid, turn the heat down to low, and spread the egg mix until evenly distributed

Once firm enough that the edges don't fall apart, begin to roll the egg mix up until you have a closed omelette
