Chicken Vegetable Skillet Pasta

**Tip: I mixed the vegetables and pasta together and left the chicken aside until I put them together so I could measure out 4oz chicken to mix with 9oz of pasta and vegetables.

Instructions

Step 1
Cook pasta according to the package directions. (You can sub other pasta if you want)
Step 2
Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chicken to pan, sprinkle salt and pepper on both sides of the chicken. and cook for approximately 5 to 8 minutes, stirring occasionally. You want to cook the chicken until juices run clear and chicken is no longer pink.
Step 3
Add red, yellow, orange peppers and shallots to pan. Cook for 4 to 7 minutes, allowing peppers and shallots to brown on edges. Add garlic and cook for 1 minute longer. (You have an option to add any vegetables you like to this)
Step 4
Add balsamic vinegar, lemon juice, 1 tablespoon olive oil. Cook for about 3 to 4 minutes, stirring while ingredients come together.
Step 5
Sprinkle with fresh parsley. (My opinion is it tasted better the next day after everything marinated each other/
