Step 1
1. Season chicken breast with taco seasoning (more or less to taste). Heat medium skillet over medium heat. Add oil and chicken, cook till brown and crispy (approximate 6 minutes per side). Place on cutting board, covered with foil, set aside.

2. In a large bowl, toss together Romain lettuce, chickpeas, corn, black beans, dark red kidney beans, tomato, and jalapeño (if using).
Step 3
3. Uncover chicken and slice into strips. Use to top salad, or mix in. If using cheese and sour cream, add in now.
Step 4
Top with salsa or your favorite salad dressing, and enjoy!
