Peanut Butter and Broccolini Pad Thai

Instructions
For the sauce
Step 1
Put the peanut butter, tamarind paste, and agave syrup into a bowl.
Step 2
Slowly mix in the soy sauce, lime juice, and 1/4 cup of water.
For the prep
Step 3
Trim the broccolini, and put the florets into a bowl. Chip the stalks and leaves into 1/2-inch pieces.
Step 4
Chop the garlic, ginger, chiles, and tofu.
Step 5
Cook the noodles according to package instructions, rinse under cold water, drain, drizzle with canola/peanut oil and toss gently with your hands.
For the Pad Thai
Step 6
In a large non-stick frying pan for which you have a lid, heat 2 tbsp canola/peanut oil on a medium-high flame.
Step 7
Fry the tofu until all sides are pale gold.
Step 8
Add the garlic, ginger, and chiles. Cook for 2 mins.
Step 9
And broccolini stalks and 1/4 cup of water, cover the pan and steam for 2 minutes.
Step 10
Add the broccolini florets, sauce, and green onions (reserve a handful for garnish), stir to combine then cover again for 2 minutes.
Step 11
Turn the heat down to a whisper, add the noodles handful by handful, gently mixing them in until coated in sauce, then turn off the heat.
For the egg

Heat a pan over medium-high heat.
Step 13
Scramble the eggs in a bowl with salt, pepper, and green onions if desired.
Step 14
Pour the eggs into the pan, let sit until the bottom starts to cook then scramble.
Step 15
Continue until cooked through then add eggs to the pad Thai.
To serve
Step 16
Plate the pad Thai with sesame seeds, reserved green onions, a drizzle of sesame oil, herbs, lime. Add any other toppings such as fried shallots or crushed peanuts. Enjoy!
