Instructions
Step 1
Add oil to a large pot
over medium-high heat.
Add meat, onion, and
garlic and stir for 7-8
minutes or until meat is
browned through.
Step 2
Add diced tomatoes,
cream cheese, taco
seasoning, and salt and
pepper to the pot. Add
bell pepper if desired
Stir for 4-5 minutes or
until tomatoes are soft
and tender and cream
cheese is mixed through.
Step 3
Pour in beef broth and
reduce heat to medium-
low Simmer 15-20
minutes or until desired
thickness is achieved
Step 4
Serve in small soup
bowls as is or add
toppings of your choice,
such as freshly sliced
avocado, 1 sour cream
shredded cheese
freshly minced cilantro
jalapeno or a drizzle
of lime.
