Ingredients

1 tablespoonchili powder
2 teaspoonspaprika
1 teaspoondry mustard
1 teaspoonground cumin
1 teaspoonground coriander
1 teaspoondried oregano
¼ teaspoonground black pepper
⅛ teaspooncayenne pepper
1.5 poundsground beef chuck
sliced cheddar
6hamburger buns
for serving, toasted if desired

Instructions
Step 1
Preheat a grill to medium high.
Step 2
Combine the chili powder, paprika, dry mustard, cumin, coriander, oregano, salt, pepper, and cayenne in a small bowl.
Step 3
Place the meat in a large bowl, add the spice mix, and use your hands to combine it very well so that the spices are fully incorporated
Step 4
Form the meat into 6 patties, using your fingers to make an indentation in the top of each.
Step 5
This will help the burgers end up relatively flat, as they will swell in the middle when cooked.
Step 6
Grill the patties until they are cooked through (160°F on an instant read thermometer), 6 or 7 minutes per side.
Step 7
If you want cheeseburgers, place a slice of cheese on the burgers
Step 8
and cover the grill to melt the cheese for the last minute of cooking.
Step 9
Place each burger on a bun, pass the condiments, and let everyone top their own.
