You can use a variety of nuts in this recipe, but cashews, macadamias or Brazil nuts seem to work the best, as they have a slightly sweeter taste than some other nuts.

Step 1
Preheat the oven to 180°C/ gas reg 6. Grease a small ovenproof dish - you can use your casserole dish.

Fry the onions in a little oil until they begin to brown, add the mushrooms and cook for a further 2 - 3 minutes. Take off the heat.
Step 3
Chop the nuts if necessary. Add to the pan.
Step 4
Make the bread into breadcrumbs Just rub it between your fingers, it does not matter if the breadcrumbs are a bit chunky Add to the pan
Step 5
Using 125ml boiling water, add 1/2 a vegetable stock cube to make up the stock. Add the teaspoon of Marmite and stir until dissolved.
Step 6
Add to the pan along with the herbs. Mix everything together.
Step 7
Pour into the dish and cook for 20 minutes. If you double the quantity, you will need to cook for another 5 minutes. The nuts should be brown on top.
