The filling

1onion

1garlic clove

1courgette
very small

75gmeat free mince

1 teaspoontomato sauce

1 teaspoonworcestershire sauce

¼ teaspoonthyme

¼ teaspoonsweet paprika

salt
to taste

pepper
to taste

50mlvegetable broth

½ teaspoonpotato starch
The potato coating
Instructions
Step 1
Heat up some oil on the pan and caramelize the onions, then add the minced garlic and cover with a lid
Step 2
When the onions are translucent adds to the pan your courgette, stir and let it cook for about 3 minutes
Step 3
Add your meat free mince, then all of the seasoning, tomato sauce, worcestershire sauce and mix until combined

Let it cook for about 5 minutes so all of the ingredients will gain the flavour of the spices

For the vegetable broth over the vegetables and mince and let it simmer for 2 minutes
Step 6
Add to the potato starch to thicken and stir
Step 7
Let it cook while preparing the potato coat

Mash the potatoes with the seasoning butter and milk
Step 9
Transfer the filling into a ramekin and top with the potato coat
Step 10
Bake at 390°F/200°C for 25-30 minutes and serve
