For the broth...
2 lbsshrimp
shells & head only
1 cupred onion

1 tablespoonají panca paste
1 tablespoonají amarillo paste
1 tablespoontomato paste
1 tablespoondried oregano

1 tablespoonsalt

Instructions
To make the broth...
Step 1
Saute shrimp shells and heads in some olive oil until it changes color a bit. Add the vegetables and continue to saute. Add the pastes, oregano and salt. Cook a couple more minutes on medium heat. Add the water, bring to a boil, lower heat and simmer for 20 minutes. Remove from heat, strain and set aside. Discard the shell mixture.
To prepare the soup...
Step 2
Bring the broth to a slow boil. Add potatoes. Lower heat and simmer for about 5 minutes. Add spaghetti. Cook for 5 minutes. Carefully drop eggs into broth 1 at a time trying to keep each egg as whole as possible. Cook for about 2 minutes medium heat. Add the shrimp and cook until they just turn pink. Add the evaporated milk, cover and turn off the heat. Sprinkle with a little cilantro to serve. Can be served with Mom's garlic toast.
