Preheat the oven to 200C / fan 180C / gas mark
Step 3
Finely slice half the red onion, then place in a bowl with the apple cider vinegar and a pinch of sea salt; leave to pickle.
Step 4
Finely dice the remaining half red onion.
Step 5
Finely chop the parsley leaves.
Step 6
Leaving the skin on, cut the sweet potato into fries.
Step 7
Place the fries on a baking tray, drizzle with 1 tsp oil and season with a pinch of sea salt.

Cook in the oven for 20-25 mins, until becoming crisp, turning halfway through.
Step 9
In the last 10 mins of cooking the fries, place the portobello mushrooms on a baking tray.

Add to the oven for 10 mins.

Meanwhile, place the beef mince, parsley and diced red onion in a bowl and mix well; season with sea salt and black pepper.

Form the mince into 2 burgers.
Step 13
Heat a frying pan with 1 tsp oil on a medium-high heat and cook the burgers for 4-5 mins on each side.
Step 14
Leave to rest for a few minutes.

While the burgers are resting, clean the pan and place on medium heat with 1 tsp oil.

Break the eggs into the pan and fry until they are cooked through.

Remove from the pan.
Step 18
Peel the avocado and destone, roughly crush with the back of a fork and season with sea salt to taste.

Thinly slice the fresh tomatoes.
Step 20
To serve, top a portobello mushroom with the fresh tomatoes, a little rocket, the beef burger, avocado, pickled onion and fried egg.
Step 21
Serve with the sweet potato fries and remaining rocket.
