Instructions
Step 1
Julienne sweet peppers.
Step 2
Briefly fry them on high heat with little oil to get slightly burned/roasted flavor. Put aside.
Step 3
Dice onion and fry until translucent but not brown.
Step 4
Finely dice hot pepper.
Step 5
Combine peppers, onion, canned tomatoes in one large pot and simmer, covered, until peppers are soft (about 30 minutes).
Step 6
Uncover towards the end of the cooking and add paprika and sweeteners (honey and/or sweet and hot sauce and/or a little sugar) and continue cooking until all liquid is reduced.
