Ingredients
6 servings
3chicken breasts
cubed
1 Tbspaprika
1 Tbsoregano
1 tspred pepper flakes
0.5shallot
diced
0.5onion
diced
3 cupschicken broth
1 cupmilk
or heavy cream
1 ½ TbsDijon mustard
4 clovesgarlic
chopped
2 Tbsbutter
½ cwhite wine
⅓ cParmesan cheese
14 ozbaby spinach
0.5lemon
squeezed
½ csun dried tomatoes in oil
salt
pepper
10 ozpasta
Instructions
Step 1
Chop chicken breast and season with paprika, oregano, red pepper, salt and pepper.
Step 2
Sauté in olive oil until 75% done and remove from pan.
Step 3
In the same pan add shallot and onion and sauté for 3-4 minutes. Add garlic and sauté another 2 minutes.
Step 4
Add Dijon mustard, chicken broth, milk (or cream), spinach and pasta. Bring to a simmer, cover and cook according to pasta instructions.
Step 5
When pasta is just before Al dente add the chicken back into the pot along with Parmesan cheese and lemon. Continue cooking until chicken is cooked all the way through.
