Instructions

Step 1
Cook rice according to package directions. Fluff with fork.
Step 2
Mix cornstarch and sesame seeds in Ziploc bag. Add tofu and toss to coat.
Step 3
Pan-fry tofu in 1 tbsp oil, turning occasionally, until golden-brown, 7-8 min.
Step 4
Combine radishes, sugar snap peas, avocado, vinegar, cilantro and sugar in a medium bowl. Season with salt and pepper. Set aside in the fridge.
Step 5
Combine cooked tofu and 2 tbsp sweet chili sauce in medium bowl.
Step 6
Stir together mayo, ½ tbsp water and 1 tsp sriracha in a small bowl.
Step 7
Divide rice between bowls. Top each with crispy tofu, salad and sriracha mayo.
Step 8
*NOTE: To press tofu, wrap it completely in paper towels, place on plate and cover with another plate or pan weighted down with canned goods. Press for at least 3 hours, during which time you should replace the paper towel 1-2 times.
