Sweet Potato Black Bean Breakfast Hash

This is one of my favorite satisfying breakfasts to make when I have a little bit more time on my hands. Frikkin delicious.

Instructions

Step 1
On a medium-heat skillet, add olive oil to coat the pan, followed by the onion and garlic, as well as a sprinkle of salt.
Step 2
Stir fry until soft, fragrant, and very slightly browned. At this point, add your chopped sweet potato. Make sure the potato chunks are relatively small, as you want them to cook fast.
Step 3
Add a splash of water and cover with a lid. Cook for 5-6 minutes on medium-low heat, stirring occasionally, until the sweet potato is soft, but not mushy.
Step 4
Add the rinsed black beans and your spices of choice, including salt.
Step 5
Add a handful of spinach and cook for 1 minute, stirring constantly, until the spinach reduces in size significantly.
Step 6
Add freshly squeezed lemon juice, cilantro and you're done!
Step 7
Serve with a soft boiled egg on top, with a dash of hot sauce.
