Halloumi and Zucchini Waffles with Smoked Salmon and Eggs

Step 1
Using your hands, squeeze out as much water as possible from the zucchini.
Step 2
Transfer to a bowl with the buttermilk, flour, 2 beaten eggs, chives, dill and haloumi. Season and mix until well combined.
Step 3
Preheat a waffle iron to high and spray with a light covering of oil.
Step 4
Spoon enough mixture into the waffle iron to cover the base, spreading to the edges. Close iron and cook for 3-5 minutes until golden brown. Set aside and keep warm. Repeat with remaining mixture.
Step 5
Cook the eggs in a saucepan of boiling water for 6-61/2 minutes for soft boiled. Drain and run under cold running water until cool enough to peel.
Step 6
Meanwhile, combine the yoghurt and zaatar in a bowl.
Step 7
Divide the waffles among plates and top with the eggs, smoked salmon and sorrel. Scatter over extra dill and drizzle with zaatar yoghurt to serve.
