Instructions

Step 1
Preheat oven to 350 degrees.
Step 2
In a large bowl, combine flour, salt, baking powder and soda.
Step 3
Separate the eggs, keeping the whites in a medium bowl.
Step 4
Measure out the buttermilk in a liquid measuring cup then add the egg yolks and melted butter. Whisk to combine then add to the dry mixture, whisking until smooth.
Step 5
Whip the egg whites with a hand mixer or whisk until peaks start to form then add in the sugar. Whip again until the peaks are stiff. Gently fold into pancake batter.
Step 6
Melt the butter in a 10-inch oven-proof skillet. Turn off the heat and slowly pour in rum and brown sugar. Stir until combined.
Step 7
Place the banana slices in a circular pattern on top of the rum sauce then sprinkle with pecans.
Step 8
Transfer skillet to a baking sheet (in case there is any leakage!) then pour the pancake batter on top of bananas. Smooth the batter evenly then bake for 28-30 minutes or until golden brown.
Step 9
Let cool for 10 minutes then invert onto a plate or serving platter slightly larger than the skillet.
