Avocado Pesto Rigatoni

Think basil pesto but with a little twist by adding in some cilantro and avocado. This is great cold as pasta salad but I love it hot as well.

Step 1
Pulse your pine nuts, garlic and seasonings along with your basil and cilantro.
Food ProcessorMix
toasted pine nuts¼ cup
garlic clove4
salt
black pepper
basil½ cup
cilantro3 Tbsp
lime juiced1
Step 2
Lastly add in your remaining ingredients and blend till smooth. I like mine to still have a pesto sort of mouth feel.
Step 3
Mix your cooked rigatoni with your sauce along with some pasta water till you have your desired sauciness.
