Instructions

Step 1
Preheat oven to 350 degrees and butter a 9x13 casserole dish. Or I use a disposable aluminum dish.
Step 2
Cook pasta until just tender. It will cook more as it bakes. Drain pasta and return to pot. While pasta is still hot, add butter, and stir until butter is melted.
Step 3
Add the half-and-half to the pot, along with half the cheddar and pepperjack, the eggs, Velveeta, green chiles (undrained if you want it spicier), salt and pepper. Stir to mix well.
Step 4
Pour into prepared dish and sprinkle with remaining cheese.
Step 5
Bake for 30 to 35 minutes covered with aluminum foil.
