Ingredients

8eggs
large
¼ cuphalf and half
½ teaspoonsalt
½ teaspoonpepper
2 teaspoonsvegetable oil
6 ounceschorizo sausage
chopped medium
1red bell pepper
stemmed, seeded, and chopped medium
1jalapeno
stemmed, seeded, and minced
1 tablespoonunsalted butter
6 ouncesshredded cheddar cheese
3scallions
sliced thin
6flour tortillas
8 to 9 inch
Instructions
Step 1
Whisk together eggs, half-and-half, salt, and pepper
Step 2
Heat oil in a 12 inch nonstick skillet over medium-high heat until shimmering
Step 3
Add chorizo and cook until lightly browned, about 1 and a half minutes
Step 4
Add the onion, bell pepper, and jalapeno and continue to cook until they begin to brown, about five minutes
Step 5
Transfer chorizo to bowl and cover to keep warm
Step 6
Wipe skillet clean and return to heat, then melt the butter and add the eggs
Step 7
Push, lift, and fold eggs from side to side until they are clumped, shiny, and wet. Fold in cheddar and scallions and remove from pan.
Step 8
Fold in chorizo
Step 9
Place each tortilla between sheets of slightly damp paper towels and microwave 30 to 60 seconds
Step 10
Distribute mixture evenly and roll into burritos (spread a portion of the filling slightly off center in a line across each tortilla. Then, fold the sides of each tortilla over the filling and roll the bottom edge of the tortilla tightly up over the filling and roll into a burrito)
