1kgFresh Fava beans
2 cupsLong grain rice
4 cupsvegetable stock
or Water
4onions
medium size, diced
2 clovesgarlic
mashed
1 tablespoonGhee
or olive oil
1 teaspoonSalt
Or to taste
1 teaspoonAllspice
or black pepper
1 teaspoonCumin
1 teaspoonDried thyme

Instructions
Step 1
In a pot, boil an amount water over medium heat with half a teaspoon of salt.
Step 2
Add the beans, Boil for 5 minutes, then drain well. Put it under the tap of cold water, then peel it off and set aside. (If you can’t find fresh ones, frozen works just fine).
Step 3
Heat the ghee or olive oil in a saucepan over medium heat, sauté the onion until wilted, add the Fava beans, garlic, cumin, pepper and thyme, 1/2 tsp of salt, a bit more olive oil and stir fry for one minute.
Step 4
Add the rice to the same pan, stir the ingredients for 30 seconds, add the 4 cups of stock or water, 1/2 tsp of salt, stir it a little and let the rice cook on a low heat unit it absorbs all the water (about 15 to 20 minutes) check the seasoning, adjust it if required.
Step 5
Let the rice rest, covered, for 10 minutes; fluff it with a fork and serve it in a large plate, sprinkle a pinch of dried thyme, garnish with toasted nuts on top, and yogurt aside or green salad.
