Instructions

Step 1
1. To make the tofu: Preheat oven to 220°C and line a baking tray. Mix together 2 tbsp tamari, 2 tbsp sesame oil and the arrowroot flour, then gently fold through the tofu . Line on the baking tray, ensuring pieces aren’t touching, and bake for 25-30 minutes. Flip halfway.

2. To make the stir fry: Mix together tahini, tamari, lime juice, rice malt syrup, ginger, garlic powder, chilli powder and water in a small bowl until smooth. Heat sesame oil in a frypan on medium heat. Add mushrooms and cook for 2 minutes, stirring continuously. Add broccoli and capsicum and cook for a further 3-5 minutes. Add bok choy and cook for a further minute, or until wilted. Add tahini sauce, stir well and remove from heat.

Step 3
To serve: Place brown rice, tahini stir fry and baked tofu in a bowl. Top with fresh parsley. Enjoy! Store in the fridge for 3-4 days.
