Instructions
Step 1
Optional: swap one sweet potato for one chicken breast; cut into stirfry sized pieces and cook to 165F
Step 2
Cut sweet potatoes into 1/4’’ cubes, toss in hot pan with high heat oil covering with a lid, until approx. 90% cooked
Step 3
Chop onion and garlic, then add to the sweet potatoes
Step 4
After everything cooks down for 2-3 minutes, add your beans and seasonings
Step 5
Add your spinach at the end for 1-2 minutes
Step 6
Spoon sweet potato bean mixture onto tortillas, roll them up, and throw them back onto the pan for 2 minutes to get a crispy tortilla edge
