Instructions

Step 1
Preheat the oven to 425°F.
Step 2
Place the chicken in a large pan (I use a 10 x 14-inch pan). Pat it dry.
Step 3
Place a small handful of the onion into the cavity of the chicken, then scatter the rest around the chicken in the pan.
Step 4
Nestle all of the yam pieces around the chicken over the onion.
Step 5
Drizzle the chicken and vegetables with the olive oil.
Step 6
In a small bowl, mix together the cumin, cinnamon, pepper, and salt.
Step 7
Take about half of the mixture and rub it into the chicken.
Step 8
Sprinkle the remainder over the yams and onion; gently toss to coat.
Step 9
Roast for 25 minutes, then reduce the heat to 325°F and bake for approximately 1 hour more.
Step 10
The chicken is done when its juices run clear or when internal temperature reaches 165°F.
Step 11
Exact timing will depend on the size of the chicken. Larger ones may take more time, while smaller ones will need less.
Step 12
Remove the chicken from the oven and place it on a plate; let it rest for about 10 minutes before you begin carving.
Step 13
Serve chicken slices with the yams, onions, and pan juices.
