Instructions
Step 1
Heat 150 grams of pre-cooked quinoa in a bowl or on the stove. I pre-cook two cups of dry quinoa ahead of time to use for lunches for the rest of the week.
Step 2
Chop cucumber, tomato, and scallion into small pieces and set aside.
Step 3
In a small saucepan with a small amount of cooking spray, saute ground turkey, adding salt, pepper, and garlic.
Step 4
Push quinoa to one side of the bowl and add spinach & arugula blend to the other side. Lightly tear greens if desired.
Step 5
Top with cucumber, tomato, scallions, turkey and tzatziki sauce. Add extra black pepper if desired.
