Instructions
Step 1
Cook onion till soft.
Step 2
Cook mushrooms in batches to brown them.
Step 3
Add mushrooms to the pot with onions and spices. Cook till fragrant then add chickpeas, tomato, and parsley.
Step 4
Add 1 cup of water or stock and simmer.
Step 5
Add in coconut milk and heat through. Taste and add salt if needed.
Step 6
Serve with toasted bread, lemon zest, and parsley for garnish.
