40 gmsbrown rice

1 bunchasparagus

2 x 125gchickpeas
drained and rinsed

5 mlsextra virgin olive oil

2 sprinklessalt

2 sprinklespepper

1 tspgarlic powder

1 tspdried oregano

0.5avocado
sliced

1tomato
diced
Dressing
Instructions
Step 1
Preheat oven to 180 degrees Celsius.

Step 2
Cook rice according to packet instructions.
Step 3
Place asparagus and chickpeas on a lined baking tray and drizzle with 5 mls of olive oil. Season with salt and pepper, garlic powder and dried oregano. Bake for 15 minutes.
Step 4
Meanwhile, add all the dressing ingredients into a food processor and pulse until smooth.
Step 5
To assemble, divide rice into two bowls. Top with avocado, tomatoes, chickpeas and roasted asparagus. Drizzle with dressing.
Step 6
Store leftovers in the fridge. Prepare bowls fresh each night.
