‘Feta’ & Pomegranate Avo Toast

Another variation of the classic avocado toast but with a Mediterranean twist.
I’ve always been a fan of the feta and pomegranate combo, so I thought why not try it with smashed avocado? And it actually went so well!
If you’re using a grainy bread then I’d toast it in the oven, so it doesn’t crumble everywhere. Otherwise you could just use a toaster.
Usually I rub a garlic clove onto the toast for an amazing garlic bread vibe, however, since this bread was grainy I used granules instead.
As you may know, I try to incorporate as many superfoods into my diet possible, hence why I use a lot of garlic, watercress and olive oil in my recipes. They’re all optional but so rich in antioxidants and extremely tasty!

Instructions
Step 1
Place two slices of bread in the oven at 180° (fan) for 7 minutes.
Step 2
Once done, add quarter of an avocado to each slice and smash with a fork.
Step 3
Sprinkle on a pinch of salt, garlic granules (optional) and drizzle with olive oil.
Step 4
Add watercress, crumbled feta and a couple teaspoons of pomegranate seeds - enjoy!
