Instructions

For the avocado mix

Step 1
In a bowl add the diced avocado.
Step 2
Add the fresh lime juice, salt, pepper, chili flakes and coriander.
Step 3
Mix well and check the seasoning. Add more salt or lime or chili to bring the avocado mix life.

To make the dish and serve.

Step 4
Slice and toast the wholegrain bread until golden brown.
Step 5
Top with the avocado mix.
Step 6
Add the 1/2 cherry tomatoes.
Step 7
Sprinkle with sunflower seeds and top with alfalfa sprouts.
Step 8
Serve with a small wedge of lime.
