Instructions

Step 1
In a large Dutch oven, gently heat the olive oil and sauté the onion until translucent. Add the sliced garlic, and blitz the tomatoes in a food processor. Pour the tomatoes into the pan, and allow this to come back to the boil. Season generously with salt.
Step 2
Add the beans and potato, and cook with the lid on but slightly ajar for 30-40 minutes, until the beans and potato are soft. If it looks like the pan is too dry, the beans and potato won’t cook properly so add a little water. If it’s watery once the beans and potatoes are cooked, cook a little longer with the lid off to evaporate.
Step 3
Serve the fasolakia lathera, topped with parsley, with some crusty bread and lemon wedges.
