Instructions

Step 1
Squeeze the juice of one lime over the diced chicken breast.
Step 2
Sprinkle salt, garlic powder, onion powder, cumin chilli powder, and smoked paprika on the diced chicken breast.
Step 3
Mix the chicken breast and then set it to the side.
Step 4
Make the chipotle dressing by mixing 140g of low fat greek yogurt with 2-4 tsp of chipotle in adobo sauce (more = more spice)
Step 5
Make the pico de galo by mixing 2 diced tomatoes, 1 diced jalapeno, 1 diced onion, coriander/cilantro, and the juice of 2 limes. Add salt, garlic powder, and pepper to taste.
Step 6
Cook the chicken on medium-high heat for 4 minutes on each side.
Step 7
Create each serving (4 total) with 130g of your preferred rice, lettuce, pico de galo, 50g corn, 60g black beans, 1/4 of the chicken (around 130g), and 1/4 of the sauce (around 35g).
