Step 1
Preheat oven to 350.
Step 2
Boil noodles until soft and roll-able
Step 3
For the filling, in a large bowl, mix together ricotta cheese and egg white until well blended. Stir in parmesan cheese and 12 oz of mozzarella. Season to taste with salt and pepper
Step 4
Align noodles on countertop and spread filling evenly among noodles and roll up. Spread 1/4 c of spaghetti sauce in the bottom of a 9x13 pan. Align rolls in pan with the seam side down. Top rolls with spaghetti sauce to cover and sprinkle the remaining mozzarella cheese over the roll-ups.

Bake for 30 minutes.
