2 lbsground beef
2 lbschuck roast
cut into 1 inch cubes
2 TbsSouthwest Seasoning blend
your preference
1.5 Tbschili powder
1 Tbschipotle chili powder
1 Tbsancho chili powder
1 Tbssmoked paprika
1 tspground cumin
1 tspground coriander
ground clove
2 tspkosher salt
1 tspblack pepper
3 Tbscanola oil
3sweet onions
large, small dice
2jalapeños
seeded and diced
7cloves garlic
minced
3 bottlesbeer
6 oztomato paste
½ tspworcestershire sauce
6 dasheshot sauce
⅓ cuptortilla chips
crushed
Instructions
Step 1
To the meat add all dry seasonings and mix well. In a large pot sear the meat in canola oil until well browned on all sides.
Step 2
Add the onions, jalapeños, and garlic and cook for 2-3 minutes, stirring often. Add all remaining ingredients and bring to a light simmer.
Step 3
Cover tightly and simmer on simmer on low for 2 ½ hours, then check for consistency: if it's too watery and thin, continue to simmer without the lid until it reduces to a thick consistency. Once the chili has become thick and hearty, it's ready.
