Instructions

Step 1
1. Wash and dry poblano peppers. Roast using your preferred method. I air fry at 400* F for 10 minutes.
Step 2
2. Place in a bag for 10-15 minutes before peeling and removing the seeds.
Step 3
3. Slice the poblano peppers and onion. Put to the side.
Step 4
4. In a mix, add Greek yogurt, light mayonnaise, mustard, and almond milk. Make sure it is well combined.
Step 5
5. Spray oil to a pan and cook shrimp for 2-3 minutes on each side or until they are pink. Season to taste with salt and pepper.
Step 6
6. Remove shrimp and spray more oil.
Step 7
7. Add onion and minced garlic. Cook 3 minutes or until onions are translucent.
Step 8
8. Add frozen corn and cook for additional 4 minutes.
Step 9
9. Lower the heat. Add poblano peppers and cream sauce. Mix well and cook for additional 5 minutes. Add seasonings to taste.
Step 10
10. Add in shrimp. Cook for additional 3 minutes.
Step 11
11. Add in cheese, turn off the heat, and mix well.
Step 12
12. Each serving is 1.5 c and add side of choice. I added 1/2 c sautéed zucchini.
