Instructions

Step 1
Preheat the oven to moderate 180c. Cut the eggplant in half lengthways and place on an oven grill, cut side up. Drizzle over olive oil. Sprinkle over spices, add salt and pepper. Bake for 40-50 minutes. Scope the cooled eggplant from skin and place in a food processor. Add garlic tahini, lemon and process until smooth
