100gplant based chicken
1 Tbspblack pepper
1 Tbspgarlic powder
1 tspcayenne
1 tspground cloves
1 tspcardamom powder
½ tspnutmeg
½ tspdried oregano
1 tspsalt
50gplain yoghurt

Instructions
Step 1
Start by adding the chicken to a bowl with the spices and the yoghurt. Mix thoroughly and let rest in the fridge until you’re done with everything else. You will be cooking this in a pan on medium high heat later as the last thing
Step 2
In a big bowl, add some flour and salt. Add a splash of water and mix with a wooden spoon. Keep doing that until the mixture is soft and not sticky (measurements aren’t necessary, as long as the dough doesn’t get too sticky and you don’t exaggerate with the salt) Let it rest outside of the fridge while you prepare toum. Once it’s done roll it out very thin and cook it on high heat in both sides
Step 3
To make the toum, add garlic, salt and the juice of a lemon to a blender with a while on top. Blend and once the garlic is a paste, start adding the vegetable oil very slowly, until an emulsion is formed
Step 4
Layer your Saj bread with toum, sliced tomatoes and pickles, chopped parsley and tahini and enjoy!
