Instructions

Marinade

Step 1
Whisk together: vegetable oil, lime juice, garlic, chipotle, sugar, cumin seeds, salt and cayenne together in a large bowl. Add shrimp and toss to coat. Refrigerate for 30 mins.

Fajita Filling

Step 2
Heat 1 tbs vegetable oil in 12-inch nonstick skillet over medium-high heat. Add peppers, onion, water, cumin seeds and salt. Cook until peppers are soft and onion is browned. Season with salt and pepper to taste.

Step 3
Wipe out skillet with paper towel. Heat vegetable oil in skillet over high heat until just smoking. Add half of shrimp in a single layer and cook until spotty brown and edges turn pink, 1 -2 mins. Cover and let shrimp stand off heat until just cooked through, 1-2 mins. Transfer to bowl and cover to keep warm
Step 4
Repeat step 3 for remaining shrimp.
Step 5
Toss shrimp with cilantro.
